Mat Western emerged in October 2021 as a collaboration between French-born Muslim revert Umar Fabrice and Singaporean Malay-Muslim Hidir Kasim, both chefs with experience at reputable restaurants. Operating from 122 Bedok North Street 2, the stall brought restaurant-quality Western and Italian-fusion cuisine to a hawker setting, offering handmade pizzas and Western classics at remarkably accessible prices ranging from 0 to 5.

What distinguished Mat Western was the commitment to making everything from scratch, including pizza dough, demonstrating professional culinary standards in a casual environment. The menu showcased both Western classics and Italian-fusion dishes, with particular praise for the chicken aglio featuring chilli padi for a Singaporean twist. The combination of French culinary technique and local Malay sensibilities created a unique offering that garnered positive reviews for both quality and value.

However, Mat Western has since permanently closed. During a period in 2022, the stall received community support when the owner disclosed debt challenges in another business, with diners ordering extra to help. Despite this goodwill and the initial positive reception, the stall ultimately ceased operations. Mat Western's brief existence represented an ambitious attempt to bring fine-dining techniques and Muslim-owned Western cuisine to neighbourhood hawker centres, though the challenges of sustaining such operations in Singapore's competitive F&B landscape proved insurmountable.
