Salai Ma'n brought together Western culinary techniques and Malay flavours at Berseh Food Centre, helmed by Chef Sulaiman Kausat who previously served as head chef at Three Buns Quayside and sous chef at Caribbean restaurant Lime House. The stall's name, "Salai" meaning smoke in Malay, perfectly captured its specialisation in smoked meats and burgers.

The menu showcased Chef Sulaiman's creative fusion approach. The Rendang Burger ($8) became a best-seller, featuring a grilled beef patty topped with house-made rendang sauce and cheese nestled between soft brioche buns - a brilliant marriage of Western burger craft and Malay spices. The Salai Jerk Chix ($9.90) demonstrated patience in preparation, with chicken marinated for at least 24 hours in house-made jerk sauce before being grilled and finished with BBQ sauce.

The crown jewel was the Salai Brisket ($12.90), where Chef Sulaiman applied his fine-dining experience to hawker centre cooking. The 150g beef brisket was smoked in-house with applewood chips, creating tender, flavourful meat that rivalled offerings from more expensive establishments. This dedication to proper smoking techniques was rare in Singapore's hawker scene.

Located at 166 Jalan Besar, the Muslim-friendly stall made quality Western-style food accessible at hawker prices. The combination of professional culinary training, quality ingredients, and affordable pricing positioned Salai Ma'n as a unique offering that brought restaurant-quality smoked meats and creative burgers to the neighbourhood.

Update: We ordered the meat platter for two, and the steak was cooked well-done, resulting in a tough bite. Unfortunately, the beef brisket didn’t meet the previous standard; it was dry and hard, unlike my previous experiences. Prices have gone up by $1. I must say I’m very disappointed this time, and the increased prices give me a reason to try the many other stalls in the food centre. —— Delicious and reasonably priced! Ordered the Rendang Kampong, Chili Dog, and Salai Brisket, and everything cost $26.90. The Rendang Kampong burger came with a beef patty and spicy rendang sauce, sandwiched between pillowy brioche buns. The sauce was not bad, rather subtle for rendang. You can’t see the patty from above because it’s smaller than the buns, but the buns are delicious! They are so fluffy and buttery, making them a perfect vehicle for the sauce. The chili dog is better than most! A touch of salsa added some freshness to the meaty sauce, and the brioche buns here shone so brightly. If you could only eat one dish, go for the brisket. It’s incredibly smoky, tender, and flavourful. Not fall-apart tender, but the perfect combination of meat resistance and layered intense flavours. The potato salad is creamy with a slight tang of vinegar, and the skin adds a little more texture. We’ve just finished and are so full now, but we’re definitely having this again.

Decided on a hot dog since it's been a while. To be honest, I wasn't expecting too much. The 'bun' was more like a brioche, very fluffy with a toasty crust. The initial bite really exceeded my expectations. The 'dog' was flavorful, but the highlight was the sauce mix, which made it a winner. Fries were good but nothing extraordinary. The owner was friendly and served it to your table. I am looking forward to the next visit to try their meat platter and burgers.
