After working in five-star hotel kitchens before Covid-19 prompted a career shift, Bruce has channelled his professional training into this hawker stall, offering restaurant-quality Chinese cooking at accessible hawker prices.

The stall's signature offering is their Chongqing-style grilled fish, weighing 700-900g and available from S\0.50 in four distinctive flavours: garlic, mala, tom yum, and curry. This speciality showcases Bruce's technique and the fusion possibilities when Chinese cooking meets Thai and Southeast Asian influences. The mala dry pot, priced at S\.50 per 100g for vegetables and S\.50 for meats, fishballs and mushrooms, features Bruce's handmade mala sauce—a fragrant blend of Chinese herbs and spices steamed over two days for maximum depth of flavour. Portions are generous, with a typical bowl at S\7.50 easily serving three or more people.

Every ingredient comes from halal-certified suppliers in Singapore, though the cooking techniques remain firmly grounded in authentic Chinese culinary traditions.
