Geylang Briyani Stall, also known as Hamid's Briyani, has been serving authentic biryani at Geylang Serai Market and Food Centre since 1964. Now operated by third-generation owner Hannan, the 31-year-old chose to continue his grandfather's legacy rather than pursue a career in mechatronics, taking over the family business after completing National Service a decade ago.

The stall maintains a focused menu of just three offerings: chicken biryani, mutton biryani, and fried chicken biryani. This simplicity allows the family to perfect their craft, and the results speak for themselves through consistently long queues. Fortunately, the family works at remarkable speed, keeping wait times reasonable despite the crowds.

The biryani rice forms the foundation of each dish, infused with shallots, cloves, cinnamon, cardamom and other aromatic spices. The addition of evaporated milk and ghee during cooking creates layers of rich flavour and a subtle creaminess. The mutton stands out for its tenderness and complete absence of gamey flavour, with each piece remaining juicy and well-marinated. The chicken similarly delivers on flavour and texture. Each plate comes with curry gravy and a small portion of sweet and sour prune that provides a traditional accompaniment.
