TLDR: Zero expectations, still disappointed. Pricey, with operational flaws. Food: $19.40 for 1 large signature beef noodle and 2 beef skewers. Please note the restaurant is not charging GST as of the date of this review (still registering GST), so the price may be higher in the future. Portion: Generous noodles, but a poor ingredient-to-carb ratio. Consider reducing noodle quantity and lowering prices. The portion size seems to be like in China, too much for Singapore. Taste: I've had authentic Lanzhou Lamian in China. This taste is average. The soup was quite salty. The noodles, though freshly pulled, clumped together due to delays in serving. The beef appears to be factory-packed and sliced in-store. Skewers are small, and $2.5 each. Do note the minimum order of 2 skewers. The taste is average. These are fried, not grilled. The only positive aspect is the friendly staff. Significant wait time during off-peak hours. Noodles were prepared quickly but sat waiting as the skewers were delayed. Poor dine-in design with cramped seating, opposing traffic flow as there are two entrances on opposing sides. Awkward waiting experience as there's no electronic buzzer system. There didn't seem to be a designated collection point, adding to the congestion as customers wait inside the small restaurant. The cramped layout combines ordering, serving, prep, and cleaning. The open-air kitchen makes hygiene hard to maintain. They should have just closed off the back entrance for the kitchen. I guess they wanted to showcase the freshly pulled noodles? But they could still achieve this with glass partitions.

Taste-wise, it was decent. The handmade noodles had a great texture. Just some tips: their “mala” soup is just their original soup with their chili oil added. By the way, the chili oil is free and readily available on the table, so instead of paying an extra $1 for the “mala” soup, just add your own chili oil . Don't get the dumplings; five small ones for $6 and they took about 20-30 minutes to serve! We had already finished our meal and still had to wait for the dumplings...

We have always loved TTLBN and this is our first time eating at this outlet. It's located in the outdoor section of the mall, facing the houses, next to LiHo and Al-Sana. We ordered a large Signature Beef Noodle, a regular Mala Beef Noodle, and a regular Mala Tendon Noodle. You can choose your preferred noodle type; if I recall correctly, there are 8 varieties of varying thickness. The Signature Beef Noodle is suitable for kids; you can request it without chili or spring onions if your child is particular. The noodles are a bit difficult to cut with a spoon and fork, so it might be a good idea to bring baby food scissors if you're dining with children.

Delicious hand-stretched noodles and appetising sides, but the skewers were just okay. Newly opened, about a month old. I did a takeaway on a wet, cold day, and the noodle soup hit the spot perfectly. I ordered the original broth and one with suan cai. Both were good, but I preferred the original. The broth was delightfully appetising, full of umami yet light enough not to be overwhelming. The saltiness was just to my liking. The hand-stretched noodles were really good; they retained their 'qq-ness' (chewiness) despite being a takeaway. The meat portions were generous and tasty. I selected chicken and picked bamboo and mushroom. The chicken was okay, but the bamboo and mushroom were well-pickled, crunchy, and very appetising. The skewers were so-so. I had the chicken, beef, tendon, and tripe. The meats were tender and large compared to other skewers I've had, but the taste could have used more spices. They were also expensive – a better value if ordered as a set with the noodles. Individual skewers were $3++ each. The place is bright and well air-conditioned. The service was also welcoming and efficient. I will definitely return to dine in and watch the noodle chef at work.
