Fu-Men Japanese Udon and Donburi stands as Singapore first halal-certified udon and donburi restaurant, located at 16 Raffles Quay basement 1 level 17 and 18 Hong Leong Building in the heart of the Central Business District. Helmed by the renowned Chef Teppei Yamashita, mastermind behind the prestigious Teppei brand, this innovative establishment specializes in authentic Hakata-style udon from Fukuoka, Japan, bringing traditional Japanese flavors to halal-conscious diners since April 2018. Operating Monday to Friday from 11 AM to 8 PM and Saturday from 10 AM to 3 PM and closed Sundays, Fu-Men offers a unique self-service dining experience where customers enjoy complimentary daily tea selections and collect their orders when buzzers ring. The restaurant signature Hakata udon features thinner, less chewy noodles compared to typical Sanuki-style udon, providing an authentic taste that is rarely found elsewhere in Singapore. Popular menu items include the unique Gobo Udon at 12 dollars, featuring Japanese burdock root with its distinctive crunchy texture and natural sweetness, Premium Beef Udon at 15 dollars, and various options like Chicken Udon, Ebi Ten or Prawn Tempura Udon, and Kitsune or Fried Sweet Tofu Udon. Their donburi selection features the intriguingly named STAMINA Don with beef, chicken, tendon, and egg, alongside classics like Beef Egg Donburi at 15 dollars, Chicken Katsu Don, Ebi Tendon at 17 dollars, Oyakodon at 13 dollars, and Curry Don. All portions are available in half sizes for lighter appetites, and diners can customize their meals with complimentary toppings including spring onions, tempura bits, chili powder, and seaweed strips. The restaurant halal certification stems from Chef Teppei realization that their authentic recipes naturally contained no pork, making the transition seamless while expanding accessibility to Muslim diners and diverse groups seeking quality Japanese cuisine in Singapore financial district.

We had a quick lunch on a Saturday after it appeared in our search for udon. Seeing the amount of positive reviews, we decided to give it a go.
Food-wise, we had higher expectations relative to the pricing. The taste of the broth, freshness/amount/execution of main ingredients, and texture of the udon were likely a 6/10. It was alright, better than food court standard, but not quite the level of a good restaurant. If the price were in the $12 range, then it would be worth an 8/10.
Ordering is DIY via an e-kiosk, with self-collection when the buzzer goes off. This is generally alright, as there are still polite and helpful staff around if you need clarification or assistance.
For a Saturday afternoon when it was relatively empty, the tables weren't clean. Overall, it felt like an overpriced food court experience for us. For $18 per bowl, sorry, there are other options for us to try.

I wanted rice instead of noodles, so I went for the chicken katsu donburi (egg rice). It was decent. The maze spicy chicken rice was seriously bland, ironic for a dish with 'spicy' in the name! Even a pinch of salt would have gone a long way.

I miss Japan, so I decided to try the udon here. It tasted similar to the one I had at Narita Airport. The tempura was not oily, and the soup was not too salty. It's slightly pricey if you add on items, but the portion makes up for it. However, I felt like the air conditioning wasn't working well during my visit, hence it was quite an unpleasant experience eating hot soup.

The udon is very smooth and bouncy. The udon noodles came plain, allowing you to add your own amount of seaweed. The chicken cutlet is crispy. They even provide free tea (hot/cold).

It's a little hard to find this stall as it is obscured by a few shops, but despite the price, it is always full house during lunch. I finally understood why after eating here. My Japanese friends describe this udon as ‘authentic, good texture, and definitely on par with or exceeding some Japanese shops’.
The surprising part is the chicken; it has a really good savory taste without an excessive spike in salt.
Highly recommended. The only issue is the lack of vegetables, but many other udon shops are the same.

I have been to Fumen since before COVID, around 2020, and I've found their food to be very consistent. Here's my review after patronising them for quite some time.
Taste: 9/10
The main dish at Fumen is the beef broth udon. They also provide dipping udon, dry udon, and donburi.
The beef broth is really delicious. It's not too overpowering with beef flavour, nor is it too heavy on the spices. Everything is just right. The taste is really refreshing when eaten hot and leaves a silky feel in the mouth. I've tried udon in Japan and found that the broth here is comparable to those in Japan.
The udon noodles also have the right texture. They are springy with a light bite, making them easy and comforting to eat with the broth.
As for other dishes, I recommend the spicy fried chicken. These chicken pieces are essentially karage, but the light amount of spice makes them really enjoyable. They'll provide Kewpie mayo to round off the taste.
The inari sushi is also something to try. The rice is not densely packed and is satisfying to eat. Paired with the tofu skin, the rice and the light soy sauce make it a dish you should try.
Consistency: 10/10
Over the years I've been here, the taste has remained consistently the same. Even with the opening and closing of other outlets, and what seems to be different chefs from the original one, the taste continues to be refreshing and delicious. Time and time again, I look forward to having a meal here.
Value for money: 8/10
The price ranges from $10 to $19.90. The price has definitely increased over the years, but the portions have remained the same. Udon with beef or chicken toppings costs more than the plain one, but with the ability to customise your udon, the meal isn't too heavy on your wallet.
Inari has definitely seen the most significant increase ($1 -> $2).
However, they provide free cold and hot roasted barley tea, which I definitely recommend trying. The tea is unsweetened and is the perfect complement to the dishes here.

Service - 5 stars
We arrived 10 minutes before 8pm, and they graciously took our order. We stayed until 8:20pm while they were pretty much done cleaning up! Very grateful.
Curry beef udon - 5 stars
5 stars for the curry. The beef was a bit sweet for me but not too fatty. I added noodles, and it was too much for me.

Prawn and egg don - 4 stars
Chicken udon - 4 stars
The chicken breast was slightly dry. The noodle portion was on the small side. I would add more noodles next time.
